摘要
双歧杆菌是存在于人和某些动物肠道中的功能益生菌,与机体的健康状况密切相关。由于其独特的生理功能优势,已经成为微生物学及临床医学等领域的研究热点之一。但双歧杆菌内部缺少有效的活性氧清除系统,对氧气十分敏感,限制了双歧杆菌的研究范围与实践应用。如何提高双歧杆菌的耐氧性能成为未来研究的重点。从双歧杆菌耐氧性及其耐氧机制、改善其耐氧性方法及耐氧双歧杆菌制品的应用前景等方面进行探讨,为今后双歧杆菌的应激理论研究及实际应用提供参考。
Bifidobacteria are functional Probiotics,which are commonly useful to the health of organisms.Bifidobacteria have been studied widely in microbial realm,food field and medical community due to their unique functions.Bifidobactria are oxygen-sensitive bacteria,they can't convert reactive oxygen into nontoxic molecules,thus their research and application are restricted.In the future,the oxygen tolerance of Bifidobacteria will become more and more important.The oxygen tolerance and its mechanism,the methods to improve oxygen tolerance,the prospect of the Bifidobacteria products with high oxygen tolerance were reviewed in this paper aimed to provide references for future research.
