摘要 文中主要介绍了热风、热泵、微波、真空冷冻相组合和干燥技术在果蔬干制中的研究现状,并提出组合干燥技术需解决的问题。 At present,fruits and vegetables are dried by single-stage drying technologies.However,problems of the energy consumption and the product quality during the drying process are not resolved effectively.Multistage combined drying technologies solved this problem.The research situation of combined drying technologies,including hot air drying,heat pump drying,microwave drying and the vacuum freeze drying used in fruits and vegetables drying are introduced.
