Astaxanthin is a kind of natural carotenoids which has strong antioxidation. Phaffia rhodozyma is an astaxanthin-producing yeasts. In this review, we introduce the method of growing and selecting high-yield stains of Phaffia rhodozyma , the perfect conditions of cultivation and the methods of extracting and determing astaxanthin.
