西凤大曲由于踩曲季节、曲种及其贮存期的不同,导致大曲的各项指标有所差异。根据大曲质量进行科学搭配,酿酒生产结果表明,出酒率和优等品率均有较大幅度的提高,保证了出厂西凤酒的质量,为企业生产打下了坚实的基础。
Different Daqu-stepping season s, yeast species, and storage period would result in great difference in the indexes of Xifeng Daqu Starter. Accordingly, scientific configuration of Xifeng Daqu is required to ensure the quality of Daqu Starter. Production practice indicated that liquor yield and quality product rate got improved greatly and the quality of produced Xifeng liquor was guaranteed, which laid solid base for normal production of the enterprise.
