摘要
对黄河龙集团酿酒车间双轮底糟醅中酵母菌进行选育,分离得到3株酵母菌。酿酒生产中试结果表明,3株酵母菌的生产应用可提高出酒率、稳定酒质风格。
3 heat-resistant and acid resistant yeast strains were screened out from double bottom distiller's grains in the workshop of Huannghelong Liquor Industry Group. Pilot scale experiment results suggested that the use of the three strains could increase liquor yield and stabilize liquor quality and liquor styles. (Tran. by YUE Yang)
