摘要
介绍了当前世界主要酒类——啤酒、葡萄酒和白酒酿造所用原料以及各种原料与所产酒品质关系。同时,介绍了国内外相关酒类酿酒原料标准化的研究进展。
Raw materials used for the production of main wine products worldwide including beer, grape wine, and liquor were introduced. The relations between each raw materials and its wine products were also elaborated. Besides, the research progress in the standardization of raw materials for wine production at home and abroad was introduced.
