摘要
采用常规方法对高体革鯻Scortum barcoo肌肉组织的营养成分进行了分析。结果表明:肌肉中水分的质量分数为71.9%,粗蛋白、粗脂肪和粗灰分的质量分数分别为19.8%、7.1%和1.2%;16种氨基酸总量为19.43%,必需氨基酸含量为9.26%,大部分必需氨基酸含量都超过FAO标准,接近或超过鸡蛋蛋白标准;脂肪酸中不饱和脂肪酸占69%,其中多不饱和脂肪酸占25.4%,DHA和EPA含量为4.9%,与海水鱼类较接近,远高于一般淡水鱼类。由于其肌肉中粗脂肪含量几乎为一般鱼类粗脂肪含量的两倍,所以其鲜肉中DHA和EPA的含量亦高于一般海水鱼类。与体内的脂肪块相比,肌肉中饱和脂肪酸含量较低,但DHA和EPA含量则较高。
The muscle nutrients were analyzed and evaluated in jade perch Scortum barcoo with body weight of 1.8-2.5 kg.It was found that there was 71.9% in moisture,19.8% in fat,and 1.2% in crude ash.Total 16 amino acids(TAA) of 19.43% and essential amino acids(EAA)of 9.26% were found in the muscles,exceeding the FAO criterion and close to the egg criterion.The unsaturated fatty acids accounted for 69%,polyunsaturated fatty acids 25.4%,and DHA+EPA 4.9% in the muscle fatty acids,same as in marine fishes and higher than those in fresh water fishes.Since there was almost as twice crude fat level in muscles of jade perch as that in other fishes,the muscular DHA+EPA levels were found to be higher in jade perch than those in marine fishes,indicating that jade perch is a high value resource of protein and fat,especially polyunsaturated fatty acids,such as DHA and EPA.
