铁缺乏症防治进展

Progress of prevention and treatment of iron deficiency

摘要 目前,许多国家利用越来越多的铁强化剂预防和治疗铁缺乏症,尽管技术上的挑战限制了生物利用率高的铁强化食物的使用,但是研究显示铁强化食品可以有效地控制铁缺乏症。选择性的作物育种和基因工程是改善膳食铁生物利用率的较有前景的新方法,但要保证有效的铁含量和额外铁的高生物利用率。 Many countries have prevented and treated iron deficiency by more and more iron nutritional fortifiers. Although technical challenges limit the amount of bioavailable iron that can be added to many foods, evidence from controlled trials has shown that iron fortification can effectively control iron deficiency. Selective plant breeding and genetic engineering are promising new approaches to improve dietary iron bioavailability. However, a major challenge is to show that they can increase iron content to nutritionally useful levels and that the additional iron is bioavailable.
