摘要
利用扫描电子显微镜、聚焦光束发射测量仪、X-射线衍射仪、差式量热扫描仪和Brabender黏度计对κ-卡拉胶的结构和性质进行研究和分析。结果表明:κ-卡拉胶为片状固体,卡拉胶在醇相中的平均粒径为25.6μm;晶体结构为无定型结构;DSC测得To、Tp、Tc分别为93.94、94.59、98.34℃,ΔH为8.374J/g;溶液黏度随浓度增大而呈指数规律增加,加热过程中,卡拉胶溶液的稳定性较好。
It evaluated the structure and properties of carrageenan by microscope,SEM,FBRM,X-ray diffraction profile,DSC(differential scanning calorimetry) parameters,Brabender. The results showed that the shape of carrageenan granule was flaked-solid,the radius was 25.6 μm in the ethanol. The X-ray diffractograms revealed amorphous compounds. DSC showed that the temperature of To,T p,T c were 93.94,94.59,98.34 ℃,ΔH was 2.97 J/g. Solution viscosity increased with the concentration increased exponentially,the stability of carrageenan solution was better in the heating process.
