摘要
采用原子吸收光谱法(atomic absorption spectrometry,AAS)和原子荧光光谱法(atomic fluorescence spectrometry,AFS)测定并研究苏州产莲藕、茭白、菱角、水芹、慈菇、芡实、荸荠等水生蔬菜中微量元素铁、锌、硒和常见有毒金属镉、铅、砷含量变化。结果显示,苏州大多数地产水生蔬菜中微量元素含量显著高于异地产水生蔬菜,且不同品种富含的微量元素存在一定差异,铁、锌和硒含量最高的分别为水芹(铁31.18mg/kg)、芡实(锌21.91mg/kg)和荸荠(硒0.047mg/kg);而有毒金属镉、铅、砷含量均较低,仅慈菇砷含量略超限值。提示苏州产水生蔬菜不仅营养价值高而且有毒金属污染低,是优质安全的食物。
To detect trace elements iron,zinc,selenium and toxic metals cadmium,lead,arsenic in lotus root,water bamboo,caltrop,cress,arrowhead,gorgon nut,water chestnut in Suzhou and study their content changes with atomic absorption spectrometry(AAS) and atomic fluorescence spectrometry(AFS) . The results showed that the content of trace elements in majority of aquatic vegetable growing in Suzhou is significantly higher than that of those from other regions of China. There are some differences in the kinds and content of abundant trace elements among various aquatic vegetable and those with highest content of iron,zinc,selenium are cress(iron 31.18 mg/kg) ,gorgon nut(zinc 21.91 mg/kg) and water chestnut(Se 0.047 mg/kg) respectively. Meanwhile the content of cadmium,lead,arsenic in those samples is relative low and only the content of arsenic in arrowhead slightly exceed maximum levels(MLs) . That suggests the aquatic vegetable growing in Suzhou is safety and quality food possessed with high nutrition value and low toxic metal pollution.
