摘要
研究了蚕丝固定化脂肪酶催化猪油水解的性能。结果表明:在温度为55℃、p H 为 82 的条件下,固定化脂肪酶活性最高。底物浓度高达55% ( W / V)时,仍无底物抑制。适宜的搅拌速度是450 r/m in~500 r/m in。在上述条件下,固定化脂肪酶间歇水解猪油时的操作半衰期约为 260 h。
The hydrolysis of lard by immobilized lipase on silk has been studied.The highest activity of immobilized lipase can be attained at temperature of 55℃ and pH value of 8.2.No inhibition was found as the substrate concentration increased up to 55%(W/V).The optimal rate of stirring is between 450 r/min~500rpm.The operational half life of immobilized lipase is about 260 hours when batch hydrolysis of lard is catalyzed by it on the optimal conditions.
