摘要
利用醇沉法提取豆渣中的可溶性膳食纤维(SDF),通过单因素试验和正交试验确定了SDF提取的最佳条件并测定其功能指标。研究结果表明,豆渣中SDF提取的最佳条件是提取温度90℃,提取时间1.5h,碳酸钠质量分数4%,加压时间1.5h,在此条件下豆渣中SDF的提取率可达52.4%。此时膳食纤维的持水力为3.1990g/g,膨胀性为6.3894mL/g。
Soluble dietary fiber (SDF) was extracted from soybean dregs in this study. The optimal conditions of extraction of SDF were determined by single factor experiment and orthogonal experiment, and its function parameters were further determined. The results showed that the optimum conditions for extraction of SDF in soybean dregs were as follows: extraction temperature 90℃, extraction time 1.5h, sodium carbonate concentration 4% and pressurization time 1.5h. Under these optimum conditions, the extraction rate of SDF, the water holding capacity of SDF and the expansibility of SDF were 52.4%, 3.1990g/g and 6.3894ml/g, respectively.
