骆驼奶中脂肪酸含量的测定与分析 被引量:14

Determination and analysis of fatty acids in fresh camel milk

摘要 采用气相色谱和气相质谱测定了骆驼奶、牛奶、羊奶、人奶中的脂肪酸组成和含量.结果表明:在骆驼奶中共检测出11种脂肪酸,其中,不饱和脂肪酸在总脂肪酸中的比例(65.02%)极显著高于牛奶(40.76%)、羊奶(40.23%)、人奶(58.17%)(P<0.01),尤其是骆驼奶中的亚麻酸(C18:3)含量(5.09%)极显著高于牛奶(0.36%)、羊奶(0.34%)、人奶(2.96%)(P<0.01). The fatty acids in fresh milk from camel,cow,goat and human were determined with gas chromatograph and GC-MS.The results showed that 11 fatty acids were determined from camel milk,the contents of unsaturated fatty acids in total fatty acids of camel milk was significantly higher(65.02 %) than that of cow milk(40.76 %),goat milk(40.23 %)and human milk(58.17 %)(P0.01),respectively.Especially the content of linolenic acid(18∶3) in camel milk(5.09 %) was also significantly higher than that of cows milk(0.36 %),goat milk(0.34 %) and humans milk(2.96 %)(P0.01),respectively.Polyunsaturated fatty acids are the insulin sensitizer.Camel milk can be used as human important sources of conjugated linoleic acid,and plays an important role in the prevention and adjuvant treatment of diabetes(especially type Ⅱ diabetes).
