Study on the Relationship between Enzymatic Activity Cell Ultrastructure and Rust Spot Disease in the Kuala Fragrant Pear during CA Storage

摘要 以气调贮藏(CA)中库尔勒香梨好果部位为对照,测定锈斑部位的多酚氧化酶(PPO)、苯丙氨酸解氨酶(PAL)、过氧化物酶(POD)的酶活及总酚类物质含量,分析库尔勒香梨在气调贮藏(CA)中的生理代谢、细胞超微结构与锈斑发病的关系。结果表明:库尔勒香梨发生锈斑部位的PPO、PAL、PPO活性均高于对照,而总酚含量则略低于对照。通过透射电镜发现,库尔勒香梨表皮锈斑与贮藏环境湿度、贮藏时间以及木质素含量呈正相关。 To analysis the realtionship between physiological metabolism, cell ultrastructure of peel and rust spot disease, health flesh was used as control, changes of PPO, PAL, POD activity and content of total phenol in the rust spot part of Kuala fragrant pear during storage under controlled atmosphere were detected. Results indicated that rust spot part had higher enzymatic activity of PPO, PAL and POD than the control, while slightly lower in total phenol content. Investigated by transmission electronic microscope to observe the microstructure of the cell with rust spot, it showed that there was a positive correlation bewteen air humidity, storage time and ligin content.
