摘要 葡萄糖是食品、医药领域最重要的原材料之一。本文对淀粉转化生产葡萄糖工艺中酶的研究以及工艺优化进展进行了综述,以期为工业化淀粉转化生产葡萄糖产量和品质的提高提供指导意见。 Glucose is one of the most important raw materials in food and medical industry.With the hope of offering guiding opinions to improve the quality and increase the production of glucose from starch in industry, researches on enzymes involved in the production of glucose from starch and the progress of the process optimization have been summarized in this paper.
