摘要
微孔淀粉是一种新型的变性淀粉。介绍了酸法和高温α-淀粉酶与糖化酶联用的方法水解玉米淀粉制备微孔淀粉,通过比较发现酶法优于酸法。并且当高温α-淀粉酶与糖化酶联用重量比为1∶3、pH=4.5、50℃、水解18 h时,可获得吸油率较高的微孔淀粉。
The microporous starch is a new type of modified starch.To introduce the use of acid method and high temperature α-amylase and saccharifying enzyme hydrolysis corn starch method to prepare microporous starch,by comparison enzymatic superior acid method.And when the weight ratio of high temperature α-amylase and saccharifying enzyme is 1∶3,pH=4.5,50 ℃,hydrolysis time is 18 hours,higher rate of oil absorption microporous starch can be obtained.
