摘要
以青海软儿梨为原料,建立软儿梨中蛋白质的快速测定方法—甲醛值滴定法,测定软儿梨中蛋白质的含量.结果表明,软儿梨果肉中总蛋白质的含量为0.151g/100g,软儿梨果汁中总蛋白质的含量为1.63g/100g,其方法精密度较高.本方法准确、简便、快速,并有效地解决了非蛋白质类的含氮物质对软儿梨中蛋白质测定结果的干扰问题,适用于软儿梨果肉和果汁中蛋白质含量的快速定量检验.
In the experiment,soft pear fruit and juice as experimental material,it establishes the rapid determination of protein in soft pear-the formaldehyde value titration,it measures the protein content in soft pear.The results show that the total protein content is 0.151g/100g in soft pear fruit,and the total protein content is 1.63g/100mL in soft pear juice,the method's precision is higher.This method is accurate,simple,rapid,and effectively solve the interference of non-protein nitrogen substances on the determination of protein in soft pear.It applies for the rapid quantitative testing of protein content in soft pear fruit and juice.
