摘要
冷结干燥是一种高能耗食品保存方法, 其中的干燥过程与冻结过程密切相关, 优化冻结过程是降低能耗的途径之一。分析了溶液制品的冻结过程和影响冻结制品结构的因素, 探讨了冷冻干燥过程中冻结与干燥的关系以及提高干燥速率的方法。
Energy saving technology is the key point of the freeze drying research.Freezing process is strongly related to the drying rate and thus the energy consumption.This paper analyzes the freezing process and the factors which influence the texture of the frozen products and the relationship between freezing process and drying process.
