摘要
用液氮快速冻结食品是保鲜新技术之一。本文介绍了在液氮冻结隧道上进行的速冻银鱼试验,并就其中存在的氮耗、托盘选择、冻体开裂与干耗等一些问题进行了理论剖析,给出了解决方案,这对于液氮快速冻结的推广是有现实意义的。
Deepfreezing food by using liquid nitrogen is a new effective method to keep it fresh.We introduced an experiment we had done with a deepfreezing tunnel for deepfreezing whitebait,analysed such problems as liquid nitrogen comsumption,congelation crazing and reduction,and finally gave the better method to solve these problems,which is helpful to popularize using liquid nitrogen to deepfreeze food.
