摘要
酿酒窖泥与酒质酒量有很密切的关系,特别是成熟老窖泥在一定程度上是产好酒的关键因素。通过人工培养窖泥加速人工窖泥老化,并在生产中应用人工窖泥的研究取得一定的成绩,酒中四大酯比例更协调,主体香更突出,口感更醇厚,窖泥在经过两轮发酵后更接近成熟窖泥,窖香更纯净,窖泥不易老化。
There is a close relationship between the liquor quality and cellar mud.Especially,the mature cellar mud is the key factor of making good liquor to some extent.Through artificial culture of cellar mud and accelerating its aging,good results were obtained in the research of man-made cellar mud application.The ratio of four esters in the liquor is more harmony,major fragrance is more outstanding and the taste is better.After two rounds of fermentation,the mud is more close to the mature mud,whose fragrance is pure and such kind of cellar mud is difficult to be ageing.
