摘要
测定了海南4种菊科野菜(革命菜、鬼针草、苦荬菜、地胆头)的营养成分,并对其营养价值进行分析。结果表明,与栽培蔬菜生菜相比,革命菜的粗灰分含量,革命菜、鬼针草、地胆头的粗纤维含量,革命菜、苦荬菜的粗脂肪含量,革命菜、苦荬菜和鬼针草的维生素C含量均明显高于生菜。结合其丰富的矿质元素含量,说明这4种野菜具有较高营养价值。
The nutrients of 4 kinds of Compositae wild vegetables(Gynura crepidioides Benth.,Bidens pilosa Linn.,Ixeris polycephala Cass.,Elephantopus scaber Linn.) in Hainan were determinated and analyzed.The results showed that compared with vegetable,the crude ash content in G.crepidioides,the crude fiber content in G.crepidioides,B.pilosa,and E.scaber,the crude fat content G.crepidioide and I.polycephala,the content of vitamin C in I.polycephala and B.pilosa were obviously higher than the Lactuca sativa Linn.var.ramosa Hort.Combined with its rich mineral element content,indicating that the 4 kinds of wild vegetables with high nutritional value.
