摘要
以番茄汁、胡萝卜汁、姜汁为原料,采用单因素试验方法,探讨复合保健饮料的最佳配方。通过正交试验获得的最佳配方为番茄汁40%、胡萝卜汁30%、姜汁8%、蔗糖8%。由此配方得到的饮料风味柔和,酸甜适中,汁液均匀、稳定。
Mixed health drink was made with tomato juice, carrot juice, and ginger juice. We obtained juice with fresh tomatoes, carrots, ginger respectively, and then got orthogonal optimum formula for 40% tomato juice, 30% carrot juice, 8%ginger and 8% sucrose. Mixed drink was soft, moderate sweet and sour, uniform and stable.
