摘要
本试验旨在研究沙葱提取物对舍饲羊肉中氨基酸的影响.试验选用60只蒙古羯羊,按照体重相近原则随机分为4组,对照组饲喂基础日粮,试验组分别添加0.03%、0.06%、0.09%的沙葱提取物。背最长肌中研究结果表明,4个处理组除Asp、Glu、Gly、Lys、Pro比例有显著差异(P<0.05),其它Aa均无显著差异(P>0.05)。在臀中肌中,4个处理组除Ala、Cys比例有显著差异(P<0.05),其它Aa均无显著差异(P>0.05)。沙葱提取物添加组羊肉中Glu、His、必需氨基酸和鲜味氨基酸均有提高,当添加0.06%的沙葱提取物时,Glu和鲜味氨基酸含量最高。
The effects on Allium Mongolia Regel Extractive on amino acid contents in mutton.The feeding experiment was done with 60 Inner Mongolia wether sheep according to similar weight principle divided into four groups,which were control group,0.03% Allium Mongolia Regel extractive group,0.06% Allium Mongolia Regel extractive group,0.09% Allium Mongolia Regel extractive group.The results of amino acids determining showed that,there were not significant difference(P0.05)in amino acid content except for Asp,Glu,Gly,Lys and proline(P0.05) in the longissimusdorsi musculus of the four treatment groups.Only the contents of Ala and Cys of all amino acids were significantly different(P0.05).In the groups added Allium Mongolia Regel Extractive,the content of Glu,His,the essential amino acids and the delicious amino acids were improved.the contents of Glu and the delicious amino acids was highest of all while added 0.06% Allium Mongolia Regel Extractive.
