摘要
植物源抗氧化活性肽因其良好的抗氧化性和安全性高等特点,受到国内外广泛关注。本文主要介绍了大豆肽、玉米肽、大米肽、小麦肽等几种常见植物源抗氧化活性肽,以及它们在制备、功能和应用方面的研究概况,并提出了现阶段发展中存在的问题,为今后的研究提供参考。
Botanical antioxidative activity peptide was received domestic and international extensive attention because of its high security characteristics.This paper mainly introduced several familiar botanical antioxidative activity peptides such as soybean peptide,corn peptide,rice peptide,and wheat peptide,which derived from cereals and their preparation,function and applied profile.Finally,this paper put forward the problems of botanical antioxidative activity peptide in the development stage,which could provide reference for future research.
