摘要
文章从精选教学内容、基础理论与前沿知识及科研有机结合、注重实验及生产实践教学等角度对发酵食品工艺学教学内容改革进行探讨。建议采用启发式教学方法、运用多媒体及三维仿真发酵实验等现代教学手段来改革教学方法。
The thesis explored the reform of teaching contents from selecting carefully teaching contents, combining basic theory to cutting - edge knowledge and scientific research in Fermented Food Technology, and emphasizing on the experiments and practice. Then the teaching methods were discussed including heuristic teaching, using modern teaching means, such as multimedia teaching and 3 - Dimensional Simulation Fermentation experiments.
