摘要
文章探讨陈年酱油的致突变性、抗癌活性以及肿瘤转移抑制能力。以经典Ames实验,MTT法和小鼠实验性肿瘤转移实验分别检测陈年酱油的突变诱发性,抗突变能力,抗癌活性及肿瘤抑制能力。结果提示普通长期贮存(5年)的陈年酱油没有明显的致突变能力,并且能抑制MNNG所引起的鼠伤寒沙门氏菌TA100的突变。陈年酱油还对3种消化系肿瘤细胞有较强的生长抑制作用,此外,对小鼠实验性肿瘤转移也有一定的抑制能力。陈年酱油无致突变性,并具有一定的肿瘤化学预防效果及抗癌活性。
To investigated the mutagenicity,anticancer and anti-tumor metastasis activity of aged soy sauce.The mutagenicity,anticancer and anti-tumor metastasis activities were detected by Ames test,MTT assay and mice experimental metastasis,respectively.Results suggested that aged soy sauce has not mutagenicty,and inhibited MNNG(0.4 μg/plate) induced mutagenicity in Salmonella typhimurium TA100.Aged soy sauce has a strong anti-proliferation activity in three kinds of cancer cells.In addition,aged soy sauce also showed a inhibit activity in mice experimental metastasis.Hence,aged soy sauce has strong anticancer and chemoprevention activities,and no mutagenicty.
