摘要 [目的]探讨紫色玉米芯色素的最佳提取工艺。[方法]采用单因素试验初步确定乙醇浓度、柠檬酸浓度、料液比和提取温度4个因子对提取紫色玉米芯色素的影响范围,在此基础上做正交试验,以确定玉米色素的最佳提取条件。[结果]4个因子中料液比对色素提取影响最大,其次为提取温度、乙醇浓度和柠檬酸浓度。最佳的提取条件是:乙醇浓度60%,柠檬酸浓度0.8%,料液比1∶10,提取温度为80℃。[结论]紫色玉米芯色素的提取工艺简单,安全无毒,材料丰富,色素含量高,是很有应用前景的天然色素资源。 [Objective] The best technique of the pigment extraction from purple corn cob was experimented.[Method] The factor such as the concentration of ethanol and lemon acid,the ratio of material/liquid and the extracting temperature affecting the yield of the pigment extracted from purple corn cob was preliminarily identified with single factor experiment design,based on which,the optimal extracting technique of the pigment was determined with orthogonal array design method.[Result] Among four factors,the ratio of material/liquid was largest one affect the extracting yield and then,the extracting temperature,the concentration of ethanol and the concentration of lemon acid.The best technical condition of the pigment extraction from purple corn cob was as follows: the concentration of ethanol was 60%;the concentration of lemon acid,0.8%;the ratio of material/liquid,1∶ 10 and the extracting temperature,80 ℃.[Conclusion] The technical process was simple,safe and no-toxicity.And the source of raw material was rich and the content of pigment from raw material was high.The technique for the extraction of natural pigment was with wide application prospect.
