摘要
咖啡因(Caffeine)作为一种生物碱,是食物中的常见成分.它在机体中发挥着广泛的作用,能引起中枢神经系统兴奋,对心血管系统具有正性作用,对消化系统、内分泌系统以及骨骼肌与运动能力产生影响[1].味觉是动物最基本、最原始也是至关重要的感觉功能,咖啡因能引起苦味感知,而苦味的识别作为一种防御机制,能帮助动物避免摄入有毒物质,它在动物的长期进化过程中起着至关重要的作用.本文对咖啡因与味觉感知的研究进展作一综述.
Caffeine is an alkaloid present in usual food.Caffeine plays a broad role in organism.It is the stimulant of central nervous system and has a positive effect on cardiovascular system.The digestive system,endocrine system and the ability of skeletal muscle can be affected by it[1].Taste is the most basic and most important sensory ability.Caffeine tastes bitter and as a defensive mechanism,it plays a very vital role in animal's life because it can help animals avoid intake of poisonous substances.This paper will summarize the knowledge about caffeine and taste perception.
