蜂胶对酸牛奶中双歧杆菌和乳酸菌的影响

摘要 目的研究蜂胶的抑菌性能及其对酸牛奶中某些发酵菌的影响。方法采用定量抑菌试验方法,测定了蜂胶对金黄色葡萄球菌、大肠埃希菌等消毒试验指标菌和酸牛奶中双歧杆菌及乳酸菌抑菌效果。结果以含1 000mg/L蜂胶溶液对悬液中金黄色葡萄球菌作用10 min,抑菌率可达99.92%;作用20 min,抑菌率可达100%。含1 000 mg/L蜂胶溶液对悬液中大肠埃希菌作用20min,抑菌率为53.33%。用含10 g/L蜂胶溶液对三种市售酸牛奶中双歧杆菌作用20 min,抑菌率范围为10.1%~17.9%;对乳酸菌作用20 min,抑菌率范围在8.30%~16.9%。结论低浓度蜂胶溶液对普通细菌繁殖体具有一定抑菌作用,对酸牛奶中双歧杆菌和乳酸菌基本无影响。 Objective To study the antibacterial effect of propolis on some fermentative bacteria in yogurt. Methods The quantitative antimicrobial test was used to observe the antibacterial activity of propolis against Staphylococcus aureus,Escherichia coli,Lactobacillus and other disinfection test indicators. Results The inhibition rate of S.aureus suspended in 1 000 mg/L propolis solution for 10 min and 20 min were 99.92% and 100% respectively.The inhibition rate of E.coli suspended in 1 000 mg/L propolis solution for 20 min was 53.33%.The inhibition rates of the bifidobacteria in three kinds of milk suspended in 1 0 g/L propolis solution for 20 min ranged from 10.1% to 17.9%;that of lactic acid bacteria ranged from 8.30% to 16.9%. Conclusion The low concentration of propolis solution has a general inhibitory effect on the multiplication of normal bacteria,while has nearly no influence on the Bifidobacterium and Lactobacillus in yogurt.
