摘要 目的比较氨基酸、肽和蛋白质类新资源食品的批准和应用情况。方法通过查阅中华人民共和国卫生部和国家食品药品监督管理局、美国食品药品监督管理局(FDA)和美国农业部(USDA)、欧盟食品安全管理局(EFSA)、澳大利亚/新西兰食品标准局(FSANZ)和食品法典委员会(CAC)的食品管理法规和报告,汇总氨基酸、肽和蛋白质类新资源食品的基本信息、来源、安全性、应用范围等,并进行比较。结果 2007年以来,卫生部批准的新资源食品中共有7种归属于氨基酸、肽和蛋白质类,其中6种新资源食品均来源于传统食品,经过特殊工艺制成,还有1种来源于非传统食品,能够应用于多种食品中。结论氨基酸、肽、蛋白质类新资源食品安全,应用较为广泛。 Objective To compare the status of approval and application among different novel foods of amino acids,peptides and proteins.Methods Based on regulations and reports review of Ministry of Health of the People's Republic of China,Chinese State Food and Drug Administration,U S Food and Drug Administration,United States Department of Agriculture,European Food Safety Authority,Food Standards Australia New Zealand and Codex Alimentarius Commission,basic information,origin and application of novel foods were collected and compared.Result Since 2007,seven novel foods belonging to amino acids,peptides or proteins have been approved,six of them were originated from normal food and produced by certain procedure and can be used in many kinds of foods.Conclusion Novel foods of amino acids,peptides and proteins are safe and widely used.
