Determination of Trans Fatty Acids in Foodstuff by FTIR

建立了一种食品中反式脂肪酸含量的测定方法，以酸水解法提取食品中脂肪酸，用傅立叶变换红外光谱仪对反式脂肪酸含量进行了快速测定，回收率达到89．26％～106．51％，相对标准偏差2．29％，结果重复性好，准确可靠。

A method for the determation of trans fatty acids in foods was established. Study on extracting fatty acids form foods through acid - hydrolysis method, rapid determanation of trans fatty acids by FTIR, the recovery rate was 89.26% - 106.51% and the relative standard deviation was 2.29%, the method was simple and accurate with a good reproducibility.
