酪蛋白糖巨肽制备及其对致龋齿菌的抑制作用 被引量:3

Preliminary Study on Preparation of Casein Glycomacropeptide and its Inhibitory Effect on the Growth of Dental Caries Bacteria

摘要 酪蛋白巨肽(CaseinGlycomacropeptide,CGMP)是一种来源于哺乳动物κ-酪蛋白,具有64个氨基酸残基(106~169)的糖肽,具有许多生理活性和营养功能,可广泛添加于保健品和医药品中。采用胃蛋白酶水解酪蛋白制备CGMP,对水解产物中CGMP进行测定,并研究CGMP抑制致龋齿菌生长的生物活性。结果显示:水解产物中确有CGMP存在,含量为30.74%;粗品CGMP对致龋齿菌-变形链球菌具有明显的抑制作用;最小抑菌浓度为24 mg/mL。 Casein Glycomacropeptide(CGMP) is a glycopeptide of 64 amino acid residues(106-169) derived from the C-terminal of mammalian κ-casein.Because CGMP has many physiological functions and unique nutritional attributes,it can widely be used in function food and medicine.In this paper,CGMP was produced by pepsin through enzyme catalysis reaction.We detected the existence of CGMP in hydrolysates and studied the inhibitory properties of raw CGMP on the growth of dental caries bacteria.The result showed that: the existence of CGMP were detected in hydrolysates and the CGMP content of hydrolysates was 30.74 %;raw CGMP has inhibitory effect on the growth of Streptococcus mutans.The minimal inhibitory concentration of raw CGMP on the growth of Streptococcus mutans was 24 mg/mL.
