竹叶中绿色素的稳定性研究

Studies on Stability of Bamboo Leaves Green Pigment

研究了用食用乙醇浸提竹叶制得的绿色素的稳定性。结果表明，该色素在碱性条件下对热、阳光和紫外光均具有良好的稳定性。

The stabilities of green pigment obtained from bamboo leaves with eatable alcohol extraction were investigated. The results show that the stability of green pigment is good to heat, sunlight and ultraviolet under base condition.
