摘要
中国白酒是中华民族的珍贵遗产,千百年来世代相传,传统工艺、手工操作、多菌系发酵是其重要特征。白酒机械化经历了漫长的发展历程,随着社会的发展、技术的进步,白酒机械化势在必行,但要与酿酒微生物、工艺技术研究同步发展,在保证中国白酒特色和质量的前提下,分香型、分工序、分项目协调攻关,逐步实施。
Liquor,featured by its long history,traditional production techniques,manual operation,and multiple microbes fermentation,is the precious heritage of the Chinese nation.Mechanized liquor-making has experienced a long march with social and technical development and become the inevitable development trend.However,the research on liquor-making microbes and crafts is also indispesible to mechanized liquor-making.Accordingly,we should explore mechanized liquor-making and breakthrough the difficulties step by step based on ensuring the features and the quality of Chinese liquor.(Tran.by YUE Yang)
