摘要 添加剂的存在影响豆腐衣的成膜质量与得率。因此对煮浆过程中添加不同作用添加剂进行研究,以寻找合适的添加剂和比例,并得到最佳成膜条件。 The existing of the additives had great effects on the yuba quality and yield.Different additives were studied during the cooking soymilk to find proper additives and proportion,so that got the optimum conditions
