摘要
研究生长期对3个品种(SC、E和C)木薯淀粉冻融稳定性、凝沉稳定性和粒径的影响。结果表明,生长期为6个月时,淀粉具有较好的冻融稳定性、较差的凝沉稳定性、较高的体积平均粒径以及较小的表面积平均粒径。相关性分析表明,3个品种木薯淀粉的凝沉稳定性与淀粉表面积平均粒径呈显著正相关,品种SC的淀粉凝沉稳定性与体积平均粒径显著正相关,品种E的冻融稳定性与淀粉表面积平均粒径呈极显著负相关。
The effect was studied of growing period on the starch properties such as freeze-thaw stability,sediment stability and mean granule size of three cassava cultivars.Freeze-thaw stability was higher and sediment stability was lower in samples harvested at 6th month.The difference of freeze-thaw stability and sediment stability depend on cultivars through the extended growing period.Surface area mean particle size was small and volume mean diameter was large at 6th month.For all cultivars,sediment stability was found to have positively significant correlations with surface area mean particle size.For SE cultivar,sediment stability was positively significant correlated to volume mean particle diameter.For E cultivars,freeze-thaw stability was negatively significant correlated to surface area mean particle size.
