摘要
以生姜为原料,利用超临界CO2萃取生姜油,与口香糖用食品胶基、木糖醇、麦芽糖醇等混合制成无糖生姜口香糖。结果表明,最佳配方为:胶基30 g,生姜油2 g,混合糖醇60 g(木糖醇52.5 g、麦芽糖醇7.5 g),所得产品姜味浓郁,口感良好。
Taking ginger as the raw material,and the ginger oil which extracted by supercritical fluid CO2,mixed with gum base,xylitol,maltitol etc.to make sugar free ginger gum.The result,from the single and orthogonal experiments,showed that the optimal formula were as follows: Gum base 30 g,ginger oil 2 g,mixing sugar alcohol 60(xylitol 52.5 g,maltitol 7.5 g).The gum was full of ginger aroma and good taste.
