摘要
对微波辅助漂烫、微波辅助干燥、微波辅助烘焙、微波辅助萃取和微波辅助解冻等技术的原理及应用现状进行综述,并对存在的问题进行针对性分析,为微波食品的工业化提供参考。
As a new type of heating technology,Microwave-assisted technology has many advantages.This paper briefly introduced the basic principle and current application condition of microwave blanching,microwave drying,microwave baking,microwave assisted extraction and microwave thawing techniques.The problems of the technology were also specifically analyzed and can provided reference for the industrialization of microwave food.
