摘要
采用凯氏定氮法测定火腿肠中蛋白质的含量,结果表明,所测样品中蛋白质的含量为11.6 g/100g,该方法简单、准确度高,适用于火腿肠中蛋白质含量的测定。
In this paper,kjeldahl method was used to determine the protein content of sausages,the result showed that the measured protein content in the sample was 11.6 g/100g.The method is simple with high accuracy and suitable for determination of protein content in sausage.
