摘要
为了适应大众消费者对啤酒口感的变化和保健的双重需求,通过对柠檬的成分及保健功能的探讨,介绍了柠檬啤酒的生产工艺和工艺参数,认为柠檬啤酒的酿造工艺与一般啤酒相同,设备不需要较大的改造,并能增强啤酒的抗氧化能力,使啤酒的保存期明显延长。
In order to satisfy the consumers' changing tastes and meet their health-care demands,this article discusses the compositions of lemon and its health-care function.The production technology and processing parameter of lemon beer are also introduced.It points out that the brewing technology of lemon beer is the same as that of any other beers,and the production equipment needs no great changes.With a strong antioxidant effect,lemon beer has a longer storage life.
