Application of the Electronic Nose and Electronic Tongue in Quality Evaluation of Fruits and Vegetables

电子鼻和电子舌是分别模拟人的嗅觉和味觉来分析、识别和检测食品原料中挥发或不挥发成分的新颖仿生仪器。该文介绍了电子鼻和电子舌的构成和工作原理,对其在果蔬成熟度检测、质量评定和贮藏期品质监控方面的应用以及研究现状进行了综述,并对其应用前景进行了展望。

The electronic nose and the electronic tongue are novel apparatus,which simulates human olfaction and gustation to analyze,recognize and examine volatility or liquid material,respectively.Here we introduced the working principle and composition of the electronic nose and the electronic tongue,and reviewed their application in maturity determination,grade assessment,freshness monitoring and shelf life prediction of fruits and vegetables.It also summarized the research status.At last,the application prospect of electronic noses and electronic tongue were studied.
