摘要
对植物甾醇乳化进行了研究,将其与油酸或维生素E混合形成乳状液,以提高植物甾醇的价值。通过正交试验,对乳化条件进行优化,得出最优乳化条件为:乳化温度40℃,油酸的添加量0.15%,乳化时间10 min,油水比1∶3。
Emulsified phytosterol is studied in this paper, it was linked with oleic acid or vitarain E for mixed formation emulsion to improve the value of phytosterol. The emulsification condition is optimized by orthogonal test. The optimal temperature emulsified conditions is as followed, temperature is 40 ℃, adding amount of oleic acid emulsion is 0. 15M, emulsion time is 10 minutes, oil-water ratio is 1 : 3.
