To optimize project of far infrared radiation and air convective mixing dehydration on mushroom, the mixed drying experiments were conducted. We established the mass and heat models of far infrared radiation and air covective mixed drying on mushroom. The kinetic equations of drying process were deduced, the radiation strengthening coefficient ( K 1), mass transfer vaporization coefficient ( K 1K t ), the whole heat transfer coefficient ( α 0) and the far infrared radiation heat transfer coefficient ( α E) were calculated. We also analyzed the variation of these coeffcient with moisture content of muhsroom and drying temperature. It is shown that these coefficients ( K 1,K 1K t, α 0,α E) vary with the drying temperature and moisture content of mushroom.
