摘要 采用超高效液相色谱串联质谱法(UPLC-MS/MS)对鲜蛋、孵化蛋和鸡胸蛋中黄体酮、己烯雌酚、睾酮和甲基睾酮4种激素含量进行检测,并对鲜蛋、孵化蛋和鸡胸蛋中黄体酮的含量进行分析。结果表明,鸡蛋中大部分都具有一定的黄体酮含量,同时黄体酮的含量有高有低,存在很大的个体差异性,没有一定的规律性。通过该试验了解了我国不同产地的鸡蛋和孵化蛋中黄体酮浓度的含量,以期为食品安全提供参考依据。 The levels of progesterone, diethylstilbestrol, testosterone and methyl testosterone in fresh eggs, hatched eggs and chicken breast eggs were determined by ultra-high performance liquid chromatography tandem mass spectrometry (UPLC-MS/MS). And the level of progesterone was also analyzed. The results indicated that progesterone could be detected in all eggs, but its level varied largely and had no regularity in different individuals. The study provides the levels of progesterone in eggs and hatched eggs from different producing areas in China in order to provide reference for food safety.
