比较了4种不同的蛋白酶对玉米蛋白粉的水解情况,分析确定了碱性蛋白酶为最佳水解用酶;通过正交试验确定最佳水解工艺参数为:温度80℃,加酶量2.0%,作用时间50min,α-氨基酸质量浓度可达1927.53mg/L。
This paper compares with four proteases, and makes sure that alkalin protease is the best one. The optimum technique parameters are determined by orthogonal test. The denaturation temperature is 80 ℃, addition amounts of alkaline protease is 2.0%, time is 50 min,α-amino acid content is 1 927.53 mg/L.
