摘要
采用壳聚糖和皂土对沙棘发酵果酒进行澄清处理,并对添加方法和用量进行了分析,改善其外观与贮存稳定性,结果表明,以壳聚糖的酸性胶体方式添加,最佳添加量为0.3 g/L,透光率可达61.3%,比以固体粉末直接添加用量少而澄清效果接近,缺点是澄清时间长,且需结合高速离心方法才能得到清亮酒液;皂土澄清沙棘果酒时的最佳用量为12.0 g/L,处理时间48 h,透光率可达59.2%;壳聚糖醋酸胶体联合皂土处理沙棘果酒的最佳用量为壳聚糖醋酸胶体0.05g/L+皂土10.0 g/L,处理时间3~4 d,果酒透光率最高可达78.9%,且使用皂土的澄清方法容易将清酒与沉淀分离。
Chitosan and bentonite was used in clarification treatment of sea buckthorn ratafee;the addition method and amount was analyzed to improve the appearance and depositing stability of the ratafee.The results showed that when only chitosan was added in the form of acid gel with an amount of 0.3 g/L,the light transmittance reached the peak of 61.3%,indicating an much less dosage but approximate clarification effect than the direct solid addition.But clarification time of this method was longer,and needed high-speed centrifugation.If adding bentonite only,the optimal adding amount was 12.0 g/L as the light transmittance reached 59.2% after treated for 48h.When the chitosan and bentonite were simultaneously used,the optimal addition amount was 0.05 g/L chitosan +10.0g/L bentonite,treating time 3~4 d and the light transmittance would reach 78.9%;and the sludge could be easily separated.
