摘要
研究了碱法提取大米蛋白的制备工艺。大米中80%以上是碱溶性谷蛋白,碱法提取具有提取率高、成本低等特点。研究结果表明:碱法提取大米蛋白的最佳工艺条件为:NaOH浓度为0.10mol.L-1,提取时间为4h,提取温度为25℃,液固比为10∶1,可得到较多的蛋白组分。
The research is about the extraction condition of rice protein in alkali.The condition of rice protein in the product is 80 percent;extracting rice protein with alkali has higher extraction efficiency and low cost.The result shows that:protein was extracted in 0.10mol·L-1 NaOH at 25℃ for 4 hours(the ratio of solvent to flour is 10)can get more protein.
