摘要
大麦是重要的杂粮作物和啤酒酿造原料,同时含有大量的功能性成分,如β-葡聚糖、SOD、黄酮类化合物、多酚、膳食纤维、γ-氨基丁酸等生理活性物质。就大麦食品的加工类型以及功能成分提取利用现状进行综述,并对大麦的深加工发展趋势进行展望。
Barley is an important grain crop and beer brewing raw material.There are many kinds of functional components in barley,such as β-glucan,SOD,flavonoids,polyphenol,dietary fibre,γ-aminobutyric acid（GABA） and others.The kinds of barley foods as well as present state of extraction and utilization of functional components were reviewed,and the prospects and development trend of barley deep processing was also given.
