鱼鳞酶解前处理工艺优化研究 被引量:1

摘要 以草鱼鱼鳞为原料优化鱼鳞脱钙、脱杂蛋白前处理工艺。通过单因素实验及正交实验,分别以鱼鳞脱钙率及胶原蛋白含量为指标,研究最佳鱼鳞酶解前处理工艺条件。结果表明,脱钙工艺中HCl浓度0.4mol/L、料液比1∶20、浸酸时间6h,脱钙率可达97.82%;最佳除杂蛋白工艺条件为NaOH浓度0.15mol/L、料液比1∶20、浸碱时间12h,除杂蛋白率可达98.34%。 The optimal pretreatment conditions of fish scales before enzymatic hydrolysis was investigated through single effecting factors and orthogonal tests by the ratios of fish scales decalcification rate and the contents of collagen.The best HCl concentration,decalcifying time,and the ratio of solid material to liquid material for decalcification were 0.4mol/L,1∶20,and 6h with the decalcification rate of 97.82%.And the best condions of taking-off noncollagenous proteins was NaOH 0.15mol/L,1∶20,12h with the taking off noncollagenous proteins rate of 98.34%.
