摘要
电子舌技术是一种分析、识别液体味道的新型检测手段,在食品工业中的应用正逐步扩展。研究利用AstreeII电子舌对不同类型和产地的9个品种的醋在5种不同的稀释浓度下进行检测和分析,建立了Fisher多级判别模型,实验结果表明在醋样稀释倍数为12.5×10倍时,模型的正确识别率达到97.53%,同时在该稀释倍数下,运用聚类分析方法定量计算9种醋的差异程度,并绘出它们的聚类关系图,直观地反映了9种醋之间的关联性,得到良好的辨别效果。实验结果对醋真假的鉴别有一定的借鉴意义。
Electronic tongue technology is a new kind of intelligent application detection technology which can be used to analyze and identify tastes of liquid.It is usd more and more widely application in food industry.An AstreeII electronic tongue to distinguish nine kinds of vinegar.The experiment was carried out in five different levels of vinegar solutions.The data of taste signals was analysised and treatment,and the the paper built Fisher discriminatory analysis model.The results show that the Fisher discriminatory analysis model's accurate indentification rate is 97.53% when the vinegar dilution rate is 12.5×10.In the dilution rate,the experiment data was analysised by the theory of cluster analysis,we obtained the Euclidean Distance between any two vinegar which can describe the difference quantitatively.The arborescence of the nine vinegar's cluster relation was plotted,it can indicate the relationship among the nine vinegar directly.The discrimination results are satisfactory.Experimental result has a referential significance to distinguish the true and false vinegar.
